Cucumber & Tomato Salad
Serves 4 | Prep time: 10 minutes | Chill time (optional): 15–30 minutes
Ingredients
2 large English (hothouse) cucumbers thinly sliced
3 cups cherry tomatoes or 3 large ripe tomatoes, chopped
¼ small red onion or 1 large shallot, very thinly sliced
2 tablespoons fresh parsley or basil, chopped
4 tablespoons extra-virgin olive oil
5 tablespoon red wine vinegar (or white wine vinegar)
1 teaspoon kosher salt
1/2 teaspoon black pepper
Optional: ½ teaspoon sugar or honey (to balance acidity)
Optional: Pinch of crushed red pepper flakes for heat
Instructions
In a medium bowl, combine the cucumber, tomatoes, and red onion.
In a small bowl, whisk together the olive oil, vinegar, salt, pepper, and optional sugar or red pepper flakes.
Pour the dressing over the salad and toss to coat evenly.
Add the chopped parsley or basil and give it a final toss.
Let sit for 15–30 minutes at room temp or refrigerate until ready to serve.
